The MAJOR Problem with counting calories

The first thing I tell my clients is to stop counting calories.

Why would you do that, Pascal?

Most of you who are counting calories for weight management assume it’s an exact science. However, there are a few reasons why tracking calories in your food is a flawed approach.

  1. Calorie counting is not exact. The calorie counts on food labels and in databases are averages. Research shows that the true calorie content of what your eating is actually significantly higher or lower. The range can be from 12%-18%. Why? Because food companies can use any of 5 different methods to estimate calories, so the FDA allows for inaccuracies of up to 20%. So “150 calories” actually means 130 calories.
  2. We don’t absorb all of the calories we consume. Some calories pass through us undigested and this varies from food to food. For example calories from nuts vary widely from only 68% for almonds to as much as 95% for pistachios.
  3. How you prepare food changes its calorie load. Cooking your food generally makes more of the calories available for absorption, and food labels don’t always reflect that. Chopping or blending your food increases the amount of calories absorbed.
  4. Individuals absorb calories uniquely (and variably). Our own individual gut bacteria can increase or decrease the calories we absorb. People with a higher proportion of one type of bacteria absorb an average of 150 calories per day more that those with another type of bacteria.
  5. People aren’t great at eyeballing portion sizes. Studies show that people mis-measure about two thirds of the time, so it’s easy to accidentally consume a lot more calories than you intend to.
    So because of all these factors, calorie counting may not be worth the effort.

Here’s a solution. Since most people think that controlling portions means counting calories, but I think there’s a better way.

Use the much easier Hand Measure system.

Your hand is proportionate to your body, its size never changes, and it’s always with you, making it the perfect tool for measuring food and nutrients – minimal counting required.

A serving of veggies = 1 fist

A serving of carbs = 1 cupped hand

A serving of fats = 1 thumb

Boom and there it is!

This system is easier than counting calories and nearly as accurate. Pay attention to results and tweak as needed.

The rotating meat and nuts breakfast for optimal body composition.

One of my favorite teaching axiom on nutrition is: “The first thing you put in your mouth in the morning…provided it is food…dictates all neurotransmitters for the whole day”

When people ask me for the best single dietary tip for optimal leanness, energy and sustained mental focus, I invariably tell them to try the rotating meat and nuts breakfast. Clients ranging from NHL & NFL stars to corporate executives rave about the increased mental acuity and focused energy they derive from adopting this food combination. When I work with clients, it is the first meal I get them to change. I get them to start on a Saturday, so that they come up with more excuses than a pregnant Catholic nun for why they could not do it.

The rationale:

Breakfast is the most important meal of the day. What you eat for breakfast sets up your entire neurotransmitter production for the day. This is particularly important if attention span, and concentration are crucial for your performance like in combat sports such as wrestling and judo. The meat and nuts breakfast raises both dopamine and acetyl-choline, the two most important neurotransmitters for focus and drive.

The meat allows for a slow and steady rise in blood sugar. The nuts provide a great source of healthy smart fats that allows the blood sugar to remain stable for an extended period of time.

My seminar hosts are well made aware of crucial my first meal of the day is. It is a non-negotiable item. I am very grateful to have hosts all over the World that cater to my breakfast needs. My Dominican host Juan Carlos Simo always comes by the hotel with a kick ass breakfast. The best salmon I have ever had, along with unbeatable avocadoes.

Mats and Helen in Stockholm bring me elk for breakfast. One of the reason why I like to teach in Sweden so much, is that I know for sure that I can easily organize an energy boosting breakfast.

If for some reason there is no host, lets say I am giving a seminar at a location I am not familiar, I always pre-scout where the best breakfast is served and simply choose steak and eggs, or a salmon omelet, or lox and poached eggs.

Just in case, I always bring a cooler on the road with an extra ice pack. If the restaurant is inadequate, I stock up the cooler with caviar and nuts, so I can start the day with optimal energy and brain function. Caviar being a favorite with Russian lifters as it provides the foundation nutrients for the synthesis of acetyl-choline.

It is quite funny sometimes to see the reaction of the hotel staff when I ask for meat in the morning. For example in Tuscany, when I asked the chef for meat for breakfast, he had a look on his face like if I asked him to point in the right direction for the tunnel that links Rome to Oslo…

Multiple studies on employee productivity or on children’s attention patterns have demonstrated that a high protein breakfast does not only impact on the energy and productivity levels of morning till noon, but extended its positive way in the late afternoon.

Here is a sample rotation:

Here is a sample 6 day rotation of the meat/nuts breakfast. It goes without saying that you DO NOT ADD ANYTHING TO IT in terms of food or beverage. Tea, coffee or herbal infusions are permissible, Milk and juice or other liquids are not allowed.

Day 1
• 1-2 Buffalo meat patties
• 1 handful of macadamia nuts

Day 2
• 1 large venison steak
• 1 handful of cashew nuts

Day 3
• 1-2 Lean turkey burgers
• 1 handful of almonds

Day 4
• 1-2 lean ground beef patties
• 1 handful of brazil nuts

Day 5
• 1-2 chicken breasts
• 1 handful of hazelnuts

Day 6
• 8-10 gluten free chicken sausages
• 1 handful of pistachios

One of the other advantages of this system is that is reduces the development of food sensitivities which are known to increase cortisol in people. More than often enough, when we test first time clients for food sensitivities we find that they have antibodies to the food they have consumed on a daily for years. That is even more true in bodybuilders, as it not uncommon to see them have allergies to beef, eggs, whey, casein, tuna and oatmeal, the basic bodybuilding staples. What about eggs? That is the most often asked question when people read this article. Eggs is one the most common food intolerances, also they are digested too rapidly to sustain blood sugar for the first meal of the day. If tolerant to them, I like them for the solid meal workout that follows the post-workout shake.

What about if you are allergic to nuts? I then recommend you a portion of the following low glycemic/low fructose fruits with your breakfast:

apricot
avocado
blackberries
blueberries
grapefruit
loganberries
nectarines
olives
papaya
peach
plum
raspberries
strawberries
Make sure that the fruits are organic, especially the strawberries, as they are one of the most sprayed crops in the World.

After breakfast, I recommend to use a teaspoon to a tablespoon of quality fish oil to mitigate even more the insulin response. That will insure top level concentration till your next meal.

8 signs that you may have leaky gut (and 1 bonus)

6. Mood and mind issues such as depression, anxiety, ADD or ADHD.

7. Skin issues such as acne, rosacea, or eczema.

8. Diagnosis of candida overgrowth.

If you have any or several of these symptoms, that are affecting you from day to day address them first before worrying about fat loss.

L-Glutamine is an amino acid that when introduced into your digestive tract will relieve many of these symptoms. There are several other solutions that can work, but you should work with your local practitioner to address these since each issue is unique.


Why is vitamin D deficiency on the rise?

Many people are avoiding sun exposure due to fear of ozone layer problems, or because of skin cancer or concern of skin wrinkling. Twenty minutes of sun exposure daily to 6% exposed skin is necessary for maintaining our body’s own production of vitamin D. Some drugs bind fats, including fat soluble Vitamin D and contribute to low vitamin D levels.

These drugs include Cholestyramine, a bile acid sequestering medication, and laxatives. Intake of Olestra and soluble fiber can also potentially reduce vitamin D absorption from food. Statin drugs can cause cholesterol levels to fall lower than ideal which may contribute to vitamin D deficiency.

***Patients with fat malabsorption, problems with bile production or production of lipase for digesting fats are also susceptible to low vitamin D levels. For these individuals consider LV-GB Complex™ (liver-gallbladder support formula) and/or Digestzymes™ (digestive support formula containing Lipase enzyme).

***Patients with dark skin pigmentation or a dark tan may require up to four times longer sun exposure to absorb the same amount of UVB as light or untanned skin, because melanin blocks UVB. African descent individuals have a much higher incidence of vitamin D deficiency, especially in northern states.

***Obese individuals can have 50% lower plasma levels of vit D than normal weight people, for the same supplementation levels or sun exposure. Women with low hormone levels are more susceptible to vitamin D deficiency.

***Estrogen or progesterone deficiency (amenorrhea, surgical or age-onset menopause) impairs the formation of the active form of vit D. Aging skin has a reduced capacity of vitamin D synthesis. By age 75, vitamin D levels can be 25% lower than levels in younger individuals.

Make sure to get 2-4 hours of sunlight daily. Play outside. Go for a walk or two, daily. And remember to take your vitamin D supplements.
